Some call it fusion



I call it sustainable. Using vegetables that are available at your farmers' market is the way to go for cooking. I am sure if we have these same vegetables, we will use them too. It might not look "authentic" but I can assure you that it will taste just like home. You just have to pick the right vegetables for the right dishes. Try them out and see how you can incorporate those vegetables in your cooking. I went to the Austin farmers' market today and found these gorgeous, I mean gorgeous Patty Pan Squash. I haven't cooked with them before but I thought I would give it a try. The grower said that it's a little firmer than yellow squash.I have used yellow squashes and zucchini in curries before, why not these good looking guys. I am waiting for my yellow squash in my garden to get bigger anyway. I bought four. I also bought a whole rabbit from Countryside Farm Products, yes, one whole rabbit. The farm offers pastured chicken, duck, rabbit and hog.

Here is my plan. I will cut the rabbit up, I might use may be half of it and make green curry with these Patty Pan squashes. I will leave the bones in for the rabbit and that will make my curry even tastier. The recipe is coming tomorrow.
