Everyday someone asks me "What's in your vegetable medley?" "How do you make it so tasty?"
Here is my answer, add vegetable oil to the pan, throw in some minced garlic, fry until fragrant and golden (this is the key), throw in your veggies, starting with the ones that take longer to cook, and saute until almost cooked, add soy sauce and cook until your veggies are just cooked. Take off the heat and transfer to a plate so your veggies won't keep cooking.
Special Note: Not all soy sauces were created equal. I prefer to use Thai or Chinese soy sauce. Tamari is also a good soy sauce for mixed veggies. These soy sauces contain little wheat in the fermentation process and it is much more flavorful. If you have a chance, taste different soy sauces side by side and you will see what I mean.
